I asked her what she did for a living, and she mentioned she was a computer programmer who was at a desk 10 hours a day. I asked her if she though her body needed all of the starches she was consuming and trying to use for energy. I explained further, it is my belief that In a world where we sit at computers instead of toiling in the fields or hard manual labor, we simply don't need the sort of high-energy, starchy foods we are told to eat, and certainly not in the proportions we are advised.
The central issue is that starch is converted to glucose very quickly, which then triggers the release of the hormone insulin. Insulin triggers the storage of excess glucose into fat, which is stored mainly around our mid section (muffin-top anyone?). If you constantly produce too much insulin, your body goes into a permanent fat-storage mode. This means people who are overweight get into a cycle of weight gain. See if you can change how your body burns fat. Change your metbolism. But the first step is knowing what to change. If you could change anything about your diet, what would it be?
